Pro Tips
**Chef's Tips & Troubleshooting:**
- Make sure the pan and oil are hot before adding ingredients for the best sear.
- Fry in batches to avoid overcrowding — lowering the temperature makes food greasy.
- Simmer the pork until fork-tender, about 45 minutes to 1 hour, depending on the cut used.
- Use bone-in pork cuts for richer broth in soup-based preparations.
Cooking Tips
Score the fat cap in a crosshatch pattern before cooking — this helps render the fat evenly and creates a crisper texture. Let pork rest for 5–10 minutes after cooking before slicing. This redistributes juices so every bite stays moist. Have all your ingredients prepped and measured before you start cooking — quick dishes leave no time for chopping mid-recipe.
Ingredient Substitutions
Pork alternatives: Chicken thighs work well in most pork recipes (they stay moist like pork does). For a leaner option, use turkey breast or firm tofu. Short on time? A pressure cooker (Instant Pot) can reduce cooking time by roughly half for most braised and stewed Filipino dishes. Reduce liquid slightly since less evaporates.
Storage & Reheating
Store in an airtight container in the refrigerator for up to 3–4 days. The flavors often deepen overnight, making leftovers even more delicious. Reheat on the stovetop over medium-low heat, adding a splash of water or broth if the sauce has thickened during storage. Microwave in 30-second bursts, stirring between each.
Noche Buena Lumpiang Shanghai
Made with ground pork, knorr pork cube, minced jicama and minced carrot — a hearty Filipino dish that's simple to cook and satisfying to share.
Instructions
- In a large bowl, combine ground pork, carrot, onion, singkamas, parsley, garlic powder, salt, ground black pepper, eggs, and Knorr pork cube. Mix well until all ingredients are well blended.
- Start to wrap the mixture by laying a piece of lumpia wrapper flat in a clean surface. Scoop 1 to 2 tablespoons of meat mixture and place it towards the lower end of the wrapper. Compress the mixture using your clean fingers and mold it into a cylinder. Pull the lower end of the wrapper to cover the mixture and then fold the left and right ends inwards. Roll until the mixture is fully covered. Apply a little bit of water to the far and of the wrapper and press it against the rolled lumpia to seal it. Perform this step until the meat mixture is fully consumed. Note: See the video below or the execution.
- Warm up oil in a deep pot. Once the oil starts to heat-up, start to fry the lumpia into batches of 7 to 8 pieces. Continue to deep fry in medium heat until the lumpia starts to float.
- Once the color turns light to medium brown, remove the lumpia from the cooking pot and arrange in a plate with a cooling rack or paper towel. Let it cool down. Continue to fry the other batches.
- Transfer to a serving plate. Serve with Sweet and sour sauce.
