Ma Po Tofu

Silky tofu in spicy minced pork sauce with fermented black beans and Sichuan pepper.

Ingredients

  • 226.8 g (8 oz) ground pork
  • 396.9 g (14 oz) silken tofu (medium, cut into cubes)
  • 4 tbsp chili bean sauce
  • 2 tsp minced ginger
  • 3 clove garlic (minced)
  • 5 piece chopped chili pepper
  • 3.25 cup chopped scallions
  • 1 tsp fermented soy beans (douchi)
  • 1.5 tsp sesame oil
  • 2 cup chicken broth
  • 2 tsp cornstarch

Instructions

  1. Heat wok or pan on a stovetop.

  2. Fold in ground pork. Cook until it turns light brown.

  3. Pour sesame oil and add ginger, garlic, half of the scallions, and chopped chillies. Stir fry for 2 minutes.

  4. Stir-in the chili bean sauce and fermented soy beans. Pour 1 1/2 cup chicken broth. Let boil. Cover and cook in medium heat for 15 minutes.

  5. Mix in tofu. Cook until sauce reduces to half.

  6. Combine cornstarch and 1/2 cup chicken broth. Stir. Pour the mixture into the wok. Cook until texture thickens.

  7. Transfer to a serving bowl. Top with remaining scallions.

  8. Serve.
