Kinamatisang Baboy

Kinamatisang baboy is easy to make and the perfect way to warm up in cold weather. Made with flavorful pork ribs, juicy tomatoes, and leafy greens, it's a simple yet nutritious and delicious dish you'll feel good serving the whole family!

Ingredients

  • 1 tbsp canola oil
  • 1 onion, peeled and chopped
  • 3 clove garlic, peeled and minced
  • 3 lb pork spare ribs, cut into 2-inch pieces
  • 5 large Roma tomatoes
  • 1 tbsp fish sauce
  • 6 cup water
  • 2 bunch pechay, cut into thirds
  • 0 salt and pepper to taste

Instructions

  1. Get a pot - medium heat and warm up 1 tablespoon oil. Add onions and garlic and Cook it until softened.

  2. Add pork spare ribs and cook, stirring occasionally, until pork changes color and is no longer pink.

  3. Add tomatoes and Cook it until softened and release juice.

  4. Add fish sauce, and cook for about 1 minute.

  5. Mix in water and Bring it to a boil. skimming off foam that floats on top.

  6. Turn down the heat and cover it, and let it simmer gently for about 50 to 60 minutes or until meat is fork-tender. Add water in ½ cup increments as needed to maintain 6 cups.

  7. Add pechay and cook for about 1 minute.

  8. Add salt and pepper to taste. Serve while hot.
