Kilawing Baboy

Cured pork in vinegar and calamansi, Filipino ceviche.

Ingredients

  • 300 g Pork, thinly sliced
  • 0.5 cup Vinegar
  • 8 pcs Calamansi juice
  • 1 pcs Onion, sliced
  • 1 pcs Tomatoes, chopped
  • 3 pcs Siling labuyo
  • 1 tbsp Ginger, julienned
  • 0.25 cup Coconut cream

Instructions

  1. Mix vinegar, calamansi juice, and ginger.

  2. Add thin pork slices. Let cure for 30 minutes.

  3. Add onion, tomatoes, and chilies.

  4. Mix in coconut cream. Serve chilled.
