Kare-Kare with Pata
Rich peanut-based stew with pork leg, oxtail, and vegetables.
Instructions
Boil pork leg and oxtail until tender, about 1.5 hours. Reserve broth.
Blend annatto seeds with some broth to make annatto oil.
Saute peanut butter with annatto oil. Add broth gradually.
Add pork, oxtail, and vegetables. Simmer for 30 minutes.
Serve with bagoong on the side.
