Grilled Chicken and Spinach Salad

Ingredients

  • 2 cup baby spinach (cleaned)
  • 2 tbsp olive oil
  • 1 tbsp parmesan cheese
  • 8 oz boneless chicken breast (sliced)
  • 1 tsp dried thyme
  • 1 medium onion (sliced)
  • 1.5 tsp salt
  • 1.25 tsp ground black pepper

Instructions

  1. Combine baby spinach, parmesan cheese, and 1 tablespoon olive oil then toss.

  2. Arrange spinach in a serving plate. Set aside.

  3. Season chicken with thyme, salt, and ground black pepper. Let stand for at least 30 minutes

  4. Grill the chicken for 5 minutes per side.

  5. While grilling, pour remaining olive oil in a pan and caramelize the onion. Set aside.

  6. Arrange the grilled chicken strips over the spinach and top with caramelized onions.

  7. Serve. Share and enjoy!
