Butternut Squash by Baking

Ingredients

  • 1 small butternut squash
  • 0.5 cup mozzarella cheese
  • 0.25 cup chopped zucchini
  • 0.25 cup chopped crimini mushroom (chopped)
  • 1 tbsp canola oil
  • 0 salt and pepper

Instructions

  1. Preheat oven to 400 F.

  2. Slice the squash in half. Scrape the center and discard the seeds.

  3. Combine zucchini, mushroom, oil, salt, and pepper in a bowl. Mix well.

  4. Place the zucchini and mushroom mixture in the middle of the squash.

  5. Bake for 30 minutes.

  6. Top with cheese. Continue to bake for 10 minutes.

  7. Serve.
