Baked Cilantro Lime Cod

Ingredients

  • 4 piece cod fillets
  • 1 cup cilantro
  • 1.33 cup extra virgin olive oil
  • 1 clove garlic
  • 2 tsp lime juice
  • 1 tsp granulated white sugar
  • 1.25 tsp red pepper flakes
  • 0 salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Brush the cod fillets with olive oil then sprinkle some salt and pepper.

  3. Place the cod fillets in a baking pan and bake for 15 minutes. Set aside.

  4. Make the sauce by combining cilantro, lime juice, extra virgin olive oil, sugar, and red pepper flakes in a blender. Blend until the texture becomes smooth.

  5. Arrange the baked cod fillets in a serving plate then spoon the sauce on top.

  6. Serve with steamed rice.
