Homemade Lechon Paksiw

Homemade Lechon Paksiw

Leftover roast pork stew in sweet liver sauce.

Ingredients

  • 2.5 lb roasted pork (preferably leftovers)
  • 3 large aurel leaves
  • 0 Salt to taste
  • 5 oz pork liver (sliced)
  • 1 Knorr Pork cube
  • 5 tbsp white vinegar
  • 7 tbsp dark brown sugar
  • 0.5 tsp ground black pepper
  • 1 onion (chopped)
  • 1 head garlic (crushed)
  • 2.5 cup water
  • 1 tbsp soy sauce
  • 3 tbsp breadcrumbs
  • 3 tbsp oil

Instructions

  1. Heat oil in a pan. Add the pork liver. Fry until color turns brown.

  2. Remove the liver from the pot and place inside the blender. Add water. Puree the mixture. Set aside.

  3. Using the remaining oil, sauté garlic and onion until the latter softens.

  4. Pour the liver puree. Let boil.

  5. Add Knorr Pork Cube, soy sauce, vinegar, and ground black pepper. Let the mixture boil. Stir.

  6. Add brown sugar and breadcrumbs. Turn the heat off and pour the entire mixture back into the blender. Puree for 1 minute.

  7. Pour the puree back into the cooking pot. Let it boil.

  8. Add laurel leaves and roasted pork. Cover the pan. Continue cooking in a low heat setting for 40 minutes.

  9. Season with salt as needed.

  10. Transfer to a serving bowl. Serve warm. Share and enjoy with rice.
