Ginisang Ampalaya

A simple Filipino sauteed bitter melon with eggs, tomatoes, garlic, and onion. Healthy, budget-friendly, and ready in under 20 minutes. Best served hot with steamed rice and fried fish on the side.

Ingredients

  • 3 piece ampalaya (cleaned and sliced thinly)
  • 3 eggs (beaten)
  • 2 piece tomatoes (diced)
  • 2 piece onions (sliced)
  • 5 clove garlic (minced)
  • 1.5 tsp ground black pepper
  • 4 g rams Maggi Magic Sarap
  • 3 tbsp oil

Instructions

  1. Place the sliced ampalaya in a large bowl and set it aside.

  2. Heat the cooking oil in a pan over medium heat.

  3. Saute the garlic, onion, and tomato until the onion softens and the tomato starts to break down.

  4. Add the ampalaya. Saute for 1 1/2 minutes.

  5. Season with ground black pepper.

  6. Pour in the beaten eggs. Let them sit for 20 seconds before stirring. Continue cooking for 1 minute.

  7. Season with Maggi Magic Sarap. Stir until well blended.

  8. Transfer to a serving plate. Serve with rice. Share and enjoy!
