Asparagus Salad

Ingredients

  • 1 bundle fresh asparagus (cleaned and edges chopped)
  • 1.5 cup balsamic vinegar
  • 1 tsp garlic (minced)
  • 0 Salt
  • 0 ground black pepper
  • 2 tbsp extra virgin olive oil (EVOO)
  • 3 cup water (for boiling)
  • 3 cup cold water
  • 0 Ice cubes

Instructions

  1. Heat a cooking pot and pour-in water. Bring to a boil

  2. Put-in asparagus and cook for 3 minutes

  3. Combine cold water and ice cubes in a large bowl then remove the asparagus from the cooking pot and directly immerse in cold water with ice.

  4. Drain excess water from the asparagus and place it in a serving plate.

  5. Create vinaigrette by combining balsamic vinegar, garlic, olive oil, salt, and pepper and mixing it thoroughly (this will serve as the dressing).

  6. Pour vinaigrette over the blanched asparagus.

  7. Serve. Share and enjoy!
