Grilled Potato Salad

Ingredients

  • 5 red potatoes (cleaned)
  • 1 tbsp extra-virgin olive oil
  • 1 small yellow onion (sliced)
  • 3 crisp bacon strips (crumbled)
  • 1 tsp red pepper flakes
  • 3.5 tbsp mayonnaise
  • 1.5 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp chopped parsley
  • 1.5 tsp sea salt
  • 1.25 tsp ground black pepper

Instructions

  1. Parboil potatoes and then blanch in cold water. Slice into quarters.

  2. In a large bowl, combine salt, pepper, red pepper flakes, and olive oil. Mix well.

  3. Add in the potatoes and then mix until the olive oil mixture coats.

  4. Grill the potatoes for about 5 minutes per side.

  5. Transfer back to the mixing bowl. Add the crumbled bacon and sliced onions.

  6. Combine mayonnaise, mustard, and Worcestershire sauce. Mix well and then pour-in the bowl with the potatoes. Gently toss.

  7. Transfer to a serving plate. Top with chopped parsley.

  8. Serve. Share and enjoy!
