Filipino Pork Fried Rice

Filipino Pork Fried Rice — a refreshing Filipino shaved ice dessert with sweet syrup and toppings. Perfect for hot days.

Ingredients

  • 1.25 lb. pork belly (thinly sliced)
  • 5 cup cooked white rice (preferably cold)
  • 2 tbsp soy sauce
  • 7 clove garlic (crushed)
  • 1 tsp salt
  • 3 tbsp oil

Instructions

  1. Combine pork slices and soy sauce. Mix and let stand for 30 minutes.

  2. Combine salt and rice. Gently mix using your hands. Set aside.

  3. Heat a wide pan and then pour-in the cooking oil.

  4. Put-in the garlic. Cook until medium brown.

  5. Remove the garlic and then set aside.

  6. Put-in the pork (including the marinade). Cook in low to medium heat for 5 minutes.

  7. Increase the heat to med-high. Put-in the rice. Cook for 5 to 7 minutes while stirring almost continuously to prevent the rice from sticking at the bottom.

  8. Mix in half of the fried garlic. Stir and then cook for a minute more.

  9. Transfer to a serving plate. Top with remaining fried garlic.

  10. Serve.
