Tokwat Baboy

Filipino appetizer composed of fried tofu, boiled pork meat and ears, onion, and chili pepper, soaked in spiced vinegar.

Ingredients

  • 1 large b pig ears
  • 1 large b pork belly (liempo)
  • 1 large b tofu (extra firm tofu)
  • 1 tbsp whole peppercorn
  • 1 piece onion (sliced)
  • 3 Thai chili pepper (chopped)
  • 2 stalks scallions (cut in 1/2 inch length)
  • 5 cup water
  • 2 cup cooking oil
  • 1.5 cup white vinegar
  • 1.25 cup soy sauce
  • 1.5 tsp sugar
  • 1.5 tsp salt
  • 1.12 tsp ground black pepper

Instructions

  1. Pour-in water in a pot and bring to a boil

  2. Add salt and whole peppercorn

  3. Put-in the pig's ears and pork belly then simmer until tender (about 30 mins to 1 hour)

  4. Pour cooking oil on a separate pan and allow to heat

  5. When the oil is hot enough, deep-fry the tofu until color turns golden brown and outer texture is somewhat crispy

  6. Cube the fried tofu and slice the boiled pig's ears and pork belly into bite-sized pieces then set aside

  7. Combine the vinegar sauce ingredients starting with sugar, salt, soy sauce, and vinegar. Stir.

  8. Microwave for 1 minute.

  9. Add the ground black pepper, onions, green onions, and chili pepper. Transfer the sauce in a serving bowl.

  10. Place the sliced meat and tofu in a serving plate with the bowl of sauce by the side
