Crispy Pata Tim
Deep-fried pork leg braised in soy-garlic sauce until fall-off-the-bone tender.
Instructions
Boil pork leg with half the garlic, bay leaves, and star anise for 1 hour until tender.
Drain and deep-fry at 180C for 20 minutes until golden and crispy.
Mix soy sauce, vinegar, remaining garlic, and brown sugar for the sauce.
Slice pork leg and baste with the soy-garlic sauce. Best served right away.
