Crispy Pata Tim

Deep-fried pork leg braised in soy-garlic sauce until fall-off-the-bone tender.

Ingredients

  • 1 kg Pork leg
  • 0.25 cup Soy sauce
  • 0.12 cup Vinegar
  • 5 pcs Garlic, minced
  • 1 tbsp Brown sugar
  • 1.5 pcs Star anise
  • 1.5 pcs Bay leaves
  • 2 cup Water

Instructions

  1. Boil pork leg with half the garlic, bay leaves, and star anise for 1 hour until tender.

  2. Drain and deep-fry at 180C for 20 minutes until golden and crispy.

  3. Mix soy sauce, vinegar, remaining garlic, and brown sugar for the sauce.

  4. Slice pork leg and baste with the soy-garlic sauce. Best served right away.
