Chickpea and Spinach Curry

This is a recipe for spinach curry with chick peas

Ingredients

  • 1 cup diced yellow onion
  • 1 can chickpeas (about 18 to 20 ounces)
  • 2 piece tomatoes (diced)
  • 3 cup chopped spinach
  • 1.5 tsp yellow curry powder
  • 2 tsp ginger powder
  • 2 tsp oil
  • 1.5 cup vegetable broth
  • 1 tsp white sugar
  • 0 Salt and pepper to taste

Instructions

  1. Heat oil in a pan

  2. Add onion, ginger powder, and tomato. Stir and cook for 2 minutes.

  3. Put-in chickpeas, curry, sugar, and vegetable broth. Stir and let boil. Simmer for 5 to 8 minutes.

  4. Add the spinach. Simmer for 2 minutes.

  5. Sprinkle salt and ground black pepper as necessary.

  6. Serve. Share and enjoy!
