Chicken Inasal BBQ

This is a recipe for Chicken Inasal Barbecue.

Ingredients

  • 2 large bs. boneless chicken breast (sliced thinly)
  • 4 thumbs ginger (crushed)
  • 0.5 cup lemongrass (crushed and chopped)
  • 5 tbsp annatto oil
  • 0.25 cup brown sugar
  • 10 tbsp coconut vinegar
  • 0.5 tsp crushed peppercorn
  • 1 tsp salt
  • 0.5 cup margarine

Instructions

  1. Arrange chicken slices in a bowl. Add all the marinade ingredients with the chicken. Toss until well blended. Cover the bowl and refrigerate for at least 3 hours.

  2. Skewer the chicken slices into a bamboo skewer (also known as barbecue stick). Set aside.

  3. Heat-up the grill.

  4. Prepare the basting sauce by combining all the sauce ingredients (see above). Mix well. Microwave for 12 seconds.

  5. Grill one side of the chicken for 2 to 4 minutes. Brush basting sauce on top. Note: do this step until the chicken is fully cooked.

  6. Transfer to a serving plate. Serve with a dip of soy sauce and calamansi with chili pepper.
