Chicken Embutido

This is the chicken version of Steamed Filipino Meatloaf

Ingredients

  • 3 large bs. ground chicken
  • 1 red bell pepper (minced)
  • 1 g reen bell pepper (minced)
  • 1 yellow onion (minced)
  • 3 eggs
  • 8 oz tomato sauce
  • 1 cup raisins
  • 1 cup carrots (minced)
  • 3.25 cup sharp cheddar cheese (grated)
  • 1.5 cup bread crumbs
  • 1.25 cup olive oil
  • 1.25 cup sweet pickle relish
  • 1.5 tsp ground black pepper
  • 1 tsp salt

Instructions

  1. In a large mixing bowl, combine the ground chicken, carrots, bell peppers, onion, raisins, sweet relish, cheese, and tomato sauce. Mix well.

  2. Pour-in the olive oil. Add the salt and pepper. Continue to stir until all the ingredients are well blended.

  3. Put the eggs and bread crumbs in the mixing bowl. Continue to mix with the other ingredients.

  4. Wrap the mixture (around 1 to 1 1/4 cup) in aluminum foil. Do this step until all the mixture are consumed.

  5. Arranged the chicken embutido in a steamer. Steam for 45 to 60 minutes.

  6. Remove the steamed embutido from the steamer. Let it cool down. You can also place it in the fridge.

  7. Slice the embutido and arrange in a serving plate.

  8. Serve chilled. Share and enjoy!
