Bicol Express

Spicy coconut milk stew from the Bicol region — pork simmered in gata (coconut cream) with siling haba and bagoong.

Ingredients

  • 500 g Pork belly, cut into cubes
  • 300 ml Coconut cream (gata)
  • 3 pcs Siling haba, chopped
  • 5 pcs Bird's eye chilies (siling labuyo)
  • 1.5 tbsp Shrimp paste (bagoong)
  • 1 pcs Onion, sliced
  • 4 pcs Garlic, minced

Instructions

  1. Sauté garlic and onion. Brown the pork until golden.

  2. Add the chili paste made from siling haba and bagoong. Stir-fry for 2 minutes.

  3. Pour in coconut cream. Add siling labuyo. Simmer on medium heat for 30 minutes.

  4. Cook until the pork is tender and the sauce is thick and oily. Serve with rice.
