Batchoy Tagalog

Batchoy Tagalog is a hearty soup made with pork, offal, and miswa in a ginger-flavored broth. It's ready in under an hour and is the perfect comfort food for cold, rainy days!

Ingredients

  • 1 tbsp oil
  • 1 onion peeled and sliced thinly
  • 4 clove garlic peeled and minced
  • 2 thumb-sized ginger peeled and minced
  • 0.5 lb pork tenderloin cut into strips
  • 0.25 lb pork heart about 1 piece, cut into thin strips
  • 2 tbsp fish sauce
  • 6 cup water
  • 0.25 lb pork liver cut into thin strips
  • 0.25 lb coagulated blood drained and cut into cubes
  • 0 salt and pepper to taste
  • 2 oz miswa
  • 1 bunch fresh chili leaves stems trimmed

Instructions

  1. Warm up some oil in a pan or pot on medium heat.

  2. Give pork a good browning, turning once or twice. Remove when done. in the pan.

  3. Add the aromatics — garlic, onion, ginger — and Cook it until fragrant.

  4. Add the onion, garlic, ginger. Season it to taste.

  5. Cook it until everything gets tender and the flavors have melded together.

  6. Serve it while it's hot with steamed rice.
