Extra crispy pork belly from Ilocos.

Ingredients

  • 333.33 g Pork belly
  • 0.67 tbsp Salt
  • 2.67 pcs Garlic, smashed
  • 0.33 tsp Black peppercorns
  • 1.33 tbsp Soy sauce
  • 0.67 tbsp Vinegar
  • 2.67 pcs Calamansi

Instructions

  1. Boil pork belly with salt, garlic, and peppercorns for 30 minutes.

  2. Score the skin. Dry thoroughly.

  3. Deep-fry at 160C for 20 minutes until skin is bubbly and crispy.

  4. Serve with soy-vinegar-calamansi dipping sauce.
