Adobong Sitaw with Pork

Ingredients

  • 1 tbsp oil
  • 1 lb pork belly cut into thin strips
  • 1 onion peeled and sliced thinly
  • 5 clove garlic peeled and minced
  • 0.75 cup vinegar
  • 0.25 cup soy sauce
  • 0.5 cup water
  • 1 bunch yard-long beans (sitaw) ends trimmed and cut into 3-inch lengths
  • 0 salt and pepper to taste
  • 0 fried garlic bits optional

Instructions

  1. Get a skillet on medium heat and warm up oil. Add onions and garlic and cook, stirring occasionally, until softened.

  2. Add pork and cook, stirring occasionally, until it gets lightly browned.

  3. Add vinegar and bring up to a rolling boil, uncovered and without stirring, for about 3 to 5 minutes.

  4. Toss in soy sauce and water. Cover, lower heat and Keep cooking until pork is cooked through and sauce is reduced.

  5. Remove the lid and increase the heat to medium. Add long beans and Cook, stirring now and then, for about 3 to 5 minutes or until tender-crisp.

  6. Move it to a serving platter and garnish with fried garlic bits, if desired. Serve while hot.
