Adobong Sitaw

Thsi is a recipe for Adobong Sitaw or Snake beans cooked the Filipino inadobo way.

Ingredients

  • 1 large b string beans (sitaw, cut in 2 inch length)
  • 1.25 lb pork belly (thinly sliced (optional))
  • 1.5 cup soy sauce
  • 1.33 cup vinegar
  • 1 piece onion (thinly sliced lengthwise)
  • 8 clove garlic (crushed)
  • 1 tsp sugar (optional)
  • 1 cup water
  • 0 Salt and ground black pepper to taste

Instructions

  1. Heat a wok and then sear the pork until enough fat is rendered.

  2. Sauté the garlic until it starts to brown.

  3. Add the onion. Continue sautéing the onion with all the ingredients until it softens.

  4. Pour the soy sauce, vinegar, and water. Let boil.

  5. Cover the wok. Adjust the heat to a simmer. Continue cooking until the pork tenderizes completely. Note: You can add more water as needed.

  6. Add the string beans. Toss and cook for 3 to 5 minutes.

  7. Season with sugar, ground black pepper, and salt (as needed).

  8. Continue cooking until the string beans soften to your liking.

  9. Transfer to a serving bowl. Serve with rice.
