Cornbread Muffin

Filipino-style muffins — moist, sweet, and often with fruits or nuts baked in. A delicious Filipino dish.

Ingredients

  • 3.25 cup yellow cornmeal
  • 1.5 cup all purpose flour
  • 1.5 tsp baking powder
  • 1.5 cup fresh milk
  • 226.8 g (8 oz) whole kernel corn (drained)
  • 1.5 cup butter
  • 2.33 cup granulated sugar
  • 1.25 cup honey
  • 2 piece raw eggs
  • 1.5 tsp Salt

Instructions

  1. Combine the dry ingredients (flour, cornmeal, baking powder, and salt) in a large mixing bowl then mix well. Set aside.

  2. Place the butter in a mixing bowl then beat until the texture becomes creamy.

  3. Gradually add the granulated sugar and continue beating until the butter and sugar are mixed thoroughly.

  4. Gradually add the dry ingredients (mixture of flour, cornmeal, baking powder, and salt) while beating.

  5. Add honey, eggs, and milk then continue mixing until every ingredient is well incorporated.

  6. Put-in the corn and mix with the other ingredients.

  7. Preheat oven to 400 degrees Fahrenheit.

  8. Grease a muffin or cupcake pan and pour-in the mixture.

  9. Bake for 18 to 22 minutes or until the muffin passes the toothpick test.

  10. Remove from the oven and let cool.

  11. Serve.
